Kitchen experiments: revuelto




In Vigo we had this delicious revuelto for lunch. Revuelto is a scrambled eggs type of a dish with other ingredients, such as shrimp, mushrooms, tomato or ham. The one we had was with gambas, sea weed and tetilla cheese. We almost went to the same place again (Restaurant Suppo, Plaza Compostela 29) for dinner to enjoy this savory treat again.

We returned home and not after long one starts to think, I can do this! So we prepared some revuelto. And it turned out good, really good in fact. If you wan’t to give it a try, you’ll need:

(2 portions)

8 eggs
spices: salt, pepper and paprika
4 shoots of asparagus
50 g of a cheese with some character (we used Gouda)
About 100 g of shrimp or other crayfish

And this is how it goes:

Peel the asparagus and chop them into sixteen parts. Break the eggs into a bowl, stir and add salt, pepper and paprika. Grate the cheese.

Fry the pieces of asparagus on a frying pan for about 4 minutes. Heat the shrimp. Then add the egg mixture and the cheese and stir every ten seconds. NOTE: be quick and eyes on the food. It gets ready quickly.
